Cruciferous Crunch by Elizabeth Brown, MS, RD

Try this three times before you say "No, thank you."

“I do not like broccoli and I haven’t liked it since I was a little kid and my mother made me eat it. And I’m President of the United States and I’m not going to eat anymore broccoli,” said Father Bush as he stomped his foot and hit his fist on the podium during his inaugural speech.

OK, it wasn’t exactly like that, but he did raise a fist in defiance against broccoli, especially when the broccoli farmers taunted him with truckloads of those little leafy green trees.

Yea, we all have tales of woe over force fed vegetables.

Beans, beans are good for your heart...by Elizabeth Brown, MS, Rd

Be all you can beans

“Beans, beans are good for your heart…”

We know beans are a healthy food but difficult to digest. Why are they troublesome, and how can we make things better?

During a recent visit to Texas, I was inspired to make chili—the national dish of Texas. They even have chili cook-offs. Recipes are so secretive that only blood kin are privy to specific ingredients.

NOT a Dagwood Special by Elizabeth Brown, MS, RD

Packing the perfect power lunch

My mom reminds me that when I was in grade school, for lunch I would eat half a cheese sandwich with mayo or bologna with catsup or a tuna sanwich. She finds this amusing because I eat so differently these days. I still love tuna but opt for troll caught tuna or wild salmon.

I don’t remember lacking energy as a child either. When report cards where given, I often got this remark: “Elizabeth is a pleasure to have in class but she talks too much.” I think by today’s standards I’d be given a diagnosis and meds, for being so verbose.
